I'd say the best compromise for you would be to set your real wheel to the maximum (if it got a setting for that) and put assetto corsa to the lowest amount but needed amount of degrees. I'd say try 300° first and then raise it if you can't make the tightest corner of a track. It will be twitchy but that's the best you can achieve!

100 in game can and usually will result in clipping at some point. Also, lowering the wheel, will lower its ceiling and therfore also result in clipping, at some point. So High in game / low on wheel has the possibility to clip at both the game and the hardware. i.e Max wheel output say 10nm.
Most cars will automatically have FFB gain of about 80. Turn off min force, it is SO bad, on logi wheels at least. Kinda odd since it's necessary for me in iRacing. For reference my settings are. Filter 0 Min force 0. All effects 0. No enhanced understeer No soft lock. No post-processing other than the LUT. LAF_DAWG.
Berniyh Alien. In principle I'd suggest a direct drive wheel for that, because that's when drifting becomes really interesting. Can't drift more naturally than with DD because the fidelity allows for the steering wheel to be positioned exactly where it would be in the real car (self-aligning torque etc.).
Generally speaking force/gain of FFB should be at 100%, spring + damper at 0% and then just use the +- keys in game to adjust the force so it doesn't spike. I also have this steering wheel, I just turn off all FFB for drifting, no spring and no damper (or maybe leave it at like 10%). You can also play with the steering lock settings, if you
